Dark Chocolate Peanut Butter Cups

Let’s cut to the chase, I know you just want the recipe 😉


3 c (ish) dark chocolate chips (I used Enjoy Life to make these dairy free)

1/4 c (ish) peanut butter

1 tablespoon coconut oil

*You’ll also need mini muffin cups


Melt chocolate chips and coconut oil together, in the microwave or in a double boiler. Divide the melted chocolate into mini muffin cups (I used silicone ones because they are much easier to pop out, and they don’t stick). Add peanut butter to the center of the melted chocolate in each of the muffin cups. I did about 1/2 tsp, but didn’t measure. (I did this by putting the peanut butter in a Ziploc bag and cutting a hole in the corner and squeezing it like frosting.) Cover the peanut butter using the remaining melted chocolate. Refrigerate overnight, or until solid.
