I personally have quite the sweet tooth. I love treating myself to a yummy something, but I don’t love the after effects that, say, a cupcake or ice cream leaves me with. While I do still indulge in those kinds of treats once in a while, I have had to find other, better options for myself. This is one of those options!

I love chia pudding because you can do SO much with it! You can add fresh orange juice and make it a creamsicle style, cocoa powder for chocolate, or really whatever your little heart desires. This is one of my personal favorites though. I hope you enjoy!

Mixed Berry Chia pudding

Ingredients:

1 can coconut milk

5 tbsp chia seeds

1 tsp maple syrup (or to taste)

1 cup frozen berries

¼ cup unsweetened coconut flakes

Directions:

In a blender, blend coconut milk, maple syrup, frozen berries, and coconut flakes. Pour into a mason jar (or sealable container) and add chia seeds. Mix well, and refrigerate overnight. I often top with a few frozen berries as well. Enjoy!
