Creamy Coconut Mango Popsicles [Dairy Free]

Happy Memorial Day! What are you doing today?? Last year Jason and I went to the cemetery to honor and recognize those who died serving our country so we may do that again. It was neat to see SO many people there that day. We ALSO are going to kind of kick off summer by setting up our grill that my awesome dad got for us.

Popsicles are the PERFECT summer treat! I’m definitely going to have more popsicle recipes coming this summer, so stay tuned! This time I was craving something creamy and tropical (dreaming of Hawaii of course). If you haven’t noticed, I’m pretty obsessed with all things tropical (ahem, pineapple logo!).

Anyway, this was the result. I’m sure you’ll enjoy this as much as we did.

All it takes is 3 SIMPLE INGREDIENTS!

But you will also need some popsicle molds. I got mine at IKEA for the BEST price though, and they’re so cute! But these from Amazon are a great option too!

COCONUT MANGO POPSICLES

Coconut Mango popsicle

INGREDIENTS:

1 Can Thai Kitchen Full-Fat Coconut Milk

2 tbsp Pure Maple Syrup

1 Mango, diced into tiny slices/pieces

DIRECTIONS:

In a blender, blend the coconut milk and maple syrup together until well mixed. Add the mango slices to the blender and blend just for a second, as to not mash the mango too much. Pour the mixture into popsicle molds and freeze for 4-6 hours or until frozen.

*You can really add any fruit that sounds good to this popsicle! We look forward to trying pineapple, kiwi, berries, and whatever else we can come up with.
