I love granola. My personal favorite way to eat it is topped on some full-fat plain yogurt with a drizzle of honey. But sometimes the good stuff can be a little pricey. I’ve always wanted to make my own and finally DID it! And it turned out really really really good.
Anyway, I’ll just get to the point and share the mouthwatering recipe.
GRAIN FREE GRANOLA
1/2 C Walnuts, chopped
1/2 C Pecans, chopped
1/2 C Almonds, chopped
1/4 C Pepitas (Pumpkin Seeds), chopped
2 Tbsp Chia Seeds
1/4 C Toasted Coconut
2 Tsp Cinnamon
1 Tbsp Coconut Oil
1 Tsp Vanilla
1/4 C Honey
INSTRUCTIONS
Preheat oven to 325. After you’ve chopped the nuts, mix them with the chia seeds, toasted coconut, and cinnamon. Melt the coconut oil, vanilla, and honey together either in the microwave or on the stove top. Spread into a thin layer on a baking sheet (you can line it with parchment). Bake for 10 minutes and then mix with a spatula. Bake for 10 more minutes, let cool, and enjoy over some tasty yogurt 🙂
