It is finally summer and we are FEELING IT here in Utah! Today’s high is 93 degrees. I for one LOVE summertime.
But the heat always makes me want ice cream. I’m positive I’m not alone in this. So Jason and I came up with a healthier option that is just as delicious and even more refreshing! The great thing about this treat is you can do it with almost any fruit you’d like and mix up the flavors.

Coconut Mango Sorbet
2 Fresh Mangos
1/3 cup of Coconut Milk
1 Tsp of Pure Maple Syrup (optional)
Unsweetened Coconut Flakes
Dice the two mangos and freeze in an airtight container for a minimum of 4 hours.
Remove from freezer 30 minutes to an hour before ready to eat to let defrost a bit.
Place mangos, coconut milk, and pure maple syrup if desired into blender, and blend until well combined!
Serve topped with coconut flakes, plus whatever other toppings you desire, and enjoy!
