Oatmeal Chocolate Chip Cookies

Baking has a special place in my heart. My family moved a lot growing up, and each time we moved into a new house, the first thing I did was unpack the kitchen, before my room, before anything else, so I could bake chocolate chip cookies and just create that sweet, just-like-home smell of freshly baked cookies. It worked every time! (Well, except if the oven wasn’t clean, then it just made the house smell burnt).

Anyway, with a healthy diet, baking isn’t something I want to give up. So I tried this recipe from My Darling Vegan, and I am so happy that I did! They are sort of a cookie version of my energy balls. I am a nanny and I made these together with the little guy. We had a blast baking, as well as eating these free of guilt, and so will you! (If you can pace yourself, that is 😉 And every once in awhile you just have to treat yourself!

What I love most about this recipe is that it’s made with only 2 ripe bananas instead of 3 or 4 like most recipes. I never have more than two ripe bananas on hand at one time!

Oatmeal choc chip cookies

Oatmeal Chocolate Chip Cookies 

2 Ripe Bananas

1/3 C All Natural Peanut Butter (I use the Kirkland brand)

1 1/2 C Oats

1/4 C (Or more if you’re a chocolate addict like me) *Chocolate Chips

*Some good quality options for chocolate chips are PASCHA Organic Dark Chocolate Chips or Enjoy Life Chocolate Morsels

Preheat oven to 350 degrees. Combine all ingredients and mix well. Scoop into balls and place on parchment-lined cookie sheet. Bake for 10-13 minutes.
