I love love LOVE my slow cooker! Being a working girl, I don’t exactly look forward to spending a ton of time in the kitchen cooking dinner when I get home after 5 o’clock. So my slow cooker saves the day multiple times a week.
This is one of my absolute favorite simple, nutritious, delicious go-to dinners. It’s so yummy and easy, it will blow you away. It’s really versatile and you can do so much with it. Switch up the salsa, maybe use mango instead of pineapple, or even switch the zucchini for another veggie that might sound good, serve over white rice, quinoa, cauli-rice, potatoes, or just eat it as is, because that’s just as amazing.
On top of being incredibly tasty, it is gluten, dairy, and sugar free. Just watch the ingredients on the salsa you choose!
Slow Cooker Pineapple Chicken
4 Chicken Breasts
1 (12 oz) Jar of your favorite clean salsa
3-4 small raw zucchini, chopped
1/4 medium fresh pineapple
Place chicken and salsa in your slow cooker on high for 4-6 hours.
When fully cooked, shred chicken and mix in chopped zucchini.
Serve over rice or cauliflower rice, and top with fresh, cold pineapple.
