Happy Monday! If you’re like me, you’re always on the lookout for a yummy, scrumptious, NUTRITIOUS snack that can keep you satisfied in those in between times in your day. So I’m sharing one of my favorites with you guys! These energy balls are a staple in our house, and I’ve shared them with multiple friends who love them just as much as we do. They’re the perfect blend of sweet and salty. Hope you enjoy!
Energy Balls
(This makes quite a bit, feel free to half it if needed)
2 C old fashioned oats
1 C toasted unsweetened toasted coconut flakes
1 C nut butter ( I usually use natural peanut butter, but almond butter also is great!)
1 C ground flax seed
3/4 C dark chocolate chips
2/3 C organic honey
2 tbsp chia seeds
2 tsp vanilla extract
Mix all ingredients in a large bowl. Put in refrigerator to chill for about an hour. Roll into 1″ balls and store in airtight container in refrigerator.
